Ingredients:

  • 4 ounces fresh mushrooms (whole or sliced)

  • 2 green onions

  • 1 heaping tablespoon minced garlic

  • 1/2 cup kimchi + 1/4 cup kimchi juice

  • 4 strips bacon

  • 2 eggs

  • 2 cups leftover cooked rice

  • 1 tablespoon butter

  • Avocado oil spray

  • 2 teaspoons sesame oil

  • Sesame seeds

  • Optional: sriracha for an extra kick

Instructions:

  1. Begin by chopping the bacon into bite-sized pieces and cooking them until they turn crispy and golden brown.

  2. While the bacon cooks, prep your mushrooms and green onions by chopping them finely.

  3. Using scissors, cut the kimchi into smaller bite-sized pieces.

  4. Once the bacon is cooked, add butter, minced garlic, mushrooms, and kimchi to the pan.

  5. Mix well and let the flavors marinate for 3-5 minutes.

  6. Add the cooked rice and kimchi juice to the pan, breaking apart any clumps in the rice. Ensure all ingredients are well-incorporated, and let it cook for another 3-5 minutes.

  7. To a separate pan, spray avocado oil and crack in two eggs.

  8. Fry the eggs until they reach your desired level of doneness, and remove from the pan.

  9. To assemble, place the kimchi fried rice in a bowl, drizzle with sesame oil, garnish with green onions, and add the fried eggs, and sesame seeds.

  10. Optional: Add a drizzle of sriracha for a more spice.
