Shrimp Tacos with Cilantro Lime Salsa
It’s Tuesday…do you know what that means? YUP, it’s TACO TUESDAY!
We are huge taco fans in my family because there are so many different ways to make tacos! You can do steak, grilled chicken, rotisserie chicken, pork, shrimp, cod, tilapia, black bean, the protein options alone are endless. Then you can use whatever tortillas, toppings and salsas your heart desires to make a completely unique combination every time.
This recipe here combines shrimp, grilled veggies, avocado, and a cilantro lime salsa, all inside a warm flour tortilla. Some may argue it’s a fajita, but since it’s Tuesday, I say it’s a TACO!!
Ingredients:
SHRIMP TACOS (Serves 4):
1 pound raw shrimp (thawed, deveined, and tails removed)
12 flour tortillas
1 small red bell pepper
1 small yellow bell pepper
1 small white (or yellow) onion
2 avocados
2 tsp pink salt
2 tsp pepper
2 tsp garlic powder
2 tsp chili powder
2 tbsp avocado oil
CILANTRO LIME SALSA:
1 clove garlic
1 small jalapeño (or serrano)
Juice from 1 lime
1/2 cup cilantro
1 cup plain Greek yogurt
1 tbsp olive oil
1 tsp pink salt
Combine all ingredients in a blender and blend until smooth
Instructions:
Thinly slice bell peppers and onion
Heat 1 tbsp avocado oil in a large pan and add sliced veggies
Season with 1 tsp of each: salt, pepper, garlic powder, and chili powder and cook until soft (about 10 minutes)
Remove veggies from pan and set aside in a large bowl. Heat another tbsp of avocado oil in the pan and add the shrimp
Season with 1 tsp of each: salt, pepper, garlic powder, and chili powder and cook until shrimp is pink (3-4 minutes per side)
Combine all salsa ingredients in a blender and blend until smooth
Warm tortillas in a pan or on a griddle
Place cooked veggies and shrimp inside a warm tortilla and top with cilantro lime salsa and avocado.
