Simple Tuna Salad Sandwich

This is my go to lazy day dinner recipe! It takes about 10 minutes to throw together and it never disappoints! You don’t need to cook anything; you just chop a few veggies and throw them into a bowl. It doesn’t get much easier than that! This recipe is perfect for using up any vegetables that need to be eaten before they go back. There are no wrong answers here; feel free to get as creative as you want to get!

Simple Tuna Salad Sandwich

Ingredients:

  • 4 slices bread

  • 1 can tuna

  • 1/2 cucumber (peeled)

  • 1/2 cup shredded carrots

  • 1/2 apple

  • 1/4 cup mayo

  • 1 tbsp dijon mustard

  • 1 tbsp relish

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1/2 avocado

  • 2 lettuce leaves

  • Fruit


Instructions:

  1. Toast your bread

  2. In a medium sized bowl add tuna, mayo, mustard, relish, and seasonings and mix well

  3. Chop cucumber, and apple, then add to the tuna mixture with the shredded carrots. Mix well and then scoop the tuna mixture onto two slices of the toasted bread.

  4. Add a lettuce leaf and avocado slices on top of the tuna and then add the second piece of bread to each sandwich. Serve with fruit and more veggies or chips!
