The Best Easy Pumpkin Muffins

If you’re looking for a simple and delicious pumpkin muffin recipe, look no further! This recipe is so quick and easy, it’s almost dangerous, and the muffins come out perfectly fluffy and moist every time!

These are great for an anytime snack, or a quick grab-and-go breakfast in the mornings.

The following recipe makes 12 muffins, but I recommend doubling the batch because they go quickly!

INGREDIENTS:

Prep time: 5 minutes Baking time: 25 minutes Total time: 30 min

Makes 12 muffins

  • 1 1/2 cups flour

  • 1 cup sugar

  • 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp cloves

  • 1/4 tsp allspice

  • 1/4 tsp nutmeg

  • 1 tbsp cinnamon

  • 1 cup canned pumpkin puree

  • 1 large egg

  • 1/3 cup vegetable oil (or melted coconut oil)

INSTRUCTIONS:

  1. Preheat oven to 350 degrees Fahrenheit

  2. In a large bowl, mix together all dry ingredients

  3. Once mixed, add in all the wet ingredients (pumpkin, egg, and oil) and gently combine

  4. Scoop the mixture into a muffin tin-lined muffin tray. Only fill each muffin tin 3/4 of the way up to allow the muffins to expand.

  5. Tap the tray on the counter to set the batter and then bake for 20-25 minutes at 350 degrees Fahrenheit

  6. Remove muffins from oven and let cool for 10 minutes before enjoying!
