Cobb Salad

This Cobb Salad has everything you want in a delicious salad. The crispy romaine lettuce and bacon combined with the creaminess of the avocado and blue cheese crumbles goes perfectly with the tangy red wine vinaigrette dressing.

Enjoy all these delicious flavors and textures while also providing your body with healthy proteins, fats, and fiber!

Pair this salad with a half sandwich, a bowl of soup, some sourdough bread with butter, or all by itself for a healthy lunch or dinner!

This Healthier Cobb Salad is proof that salads CAN be simple and nutritious! Double or triple the recipe to have a simple and ready to go meal for the entire week!

This recipe makes 2 servings:

Ingredients:

SALAD

  • 4 cups chopped romaine lettuce

  • 2 boiled eggs

  • 1/2 cup cherry tomatoes

  • 1/2 cucumber (chopped)

  • 1 avocado

  • 1/2 cup blue cheese crumbles

  • 4 strips turkey bacon

DRESSING

  • 1/2 cup red wine vinegar

  • 1/2 cup olive oil

  • Juice from 1/2 lemon

  • 1 tbsp dijon mustard

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp oregano

  • 1/2 tsp garlic powder

Instructions:

  1. Cook turkey bacon in a pan until crispy

  2. While bacon is cooking, chop lettuce, and dice cucumber, avocado, and boiled eggs

  3. In two separate bowls, combine lettuce, cherry tomatoes, diced cucumber, avocado, boiled eggs, and blue cheese crumbles

  4. Cut cooked bacon into small pieces and add to the bowls

  5. In a separate bowl, combine all dressing ingredients, and whisk together well with a fork or whisk until mixed

  6. Pour dressing all over the top of the salads and enjoy!

Helpful Tips:

Use store-bought boiled eggs. You can certainly boil a half dozen eggs at the start of the week or you can buy already boiled eggs. Both ways are convenient, but if you’re lazy…I mean busy like me, store-bought makes throwing together this salad so much easier!

Cook bacon for the week! Whip up a full package of bacon for a quick protein/fat salad topping throughout the week! This recipe is quick but will be even quicker if your prep the bacon “bits” ahead of time! Save leftover bacon in an air tight container in the fridge and toss onto your salads cold or heated up in the microwave or air fryer.

Make a big batch of dressing! The red wine vinaigrette dressing is super simple to make, but for a quick grab and go kind of recipe, just double or triple the dressing recipe and store the rest of the dressing in a mason jar in the fridge for up to a week! You could also absolutely use any store bought dressing like this balsamic vinaigrette!
