Blueberry Vanilla French Toast
French toast is one of those breakfasts that FEELS fancy and difficult to make, but it is actually SO SIMPLE to make! Depending on the size pan or griddle you have, you can make a big ol batch in less than 15 minutes. Let’s get to french toastin!
Blueberry Vanilla French Toast
Servings: 2 | Total Cook Time: 15 minutes
INGREDIENTS
8 slices french bread (small baguette style - if using a large french bread loaf, use 4 slices)
2 eggs
1 tbsp milk
1/4 tsp vanilla extract
2 tbsp cinnamon
Butter spray (or salted butter)
1 cup blueberries
Whipped cream
1/2 cup vanilla greek yogurt
INSTRUCTIONS:
In a large bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
Heat a large skillet or griddle and spray with butter spray.
Dip the french bread slice into the egg mixture, and fully coat on all sides.
Place the coated bread on the skillet or griddle, and repeat with the remaining slices.
Cook the toast on each side for 3-4 minutes, or until golden brown, and then flip, cooking for another three minutes.
Remove the golden brown french toast slices from the skillet or griddle, add to a plate, and top with greek yogurt, blueberries, and whipped cream.
