Air Fried Tilapia with Rice & Veggies

Tilapia fish seasoned with lemon juice, avocado oil spray, salt, garlic powder, onion powder, and chili powder, made in under 30 minutes! This air fried tilapia recipe with rice and veggies is super easy, quick, and healthy for your busy weeknights!

Ingredients:

Serves: 2

  • 3 tilapia filets

  • 1 bunch of asparagus

  • 1 pound of green beans (trimmed - ends cut off)

  • 1 cup bone broth

  • 1/2 cup basmati rice

  • 2 tbsp avocado oil

  • avocado oil spray

  • juice of one lemon

  • 1 tbsp salt

  • 2 tbsp garlic powder

  • 2 tbsp onion powder

  • 2 tbsp chili powder

  • 1 tbsp turmeric powder

  • Tapatio/Valentina (optional)

Directions:

  1. Preheat oven to 375 degrees Fahrenheit

  2. Bring bone broth to a boil in a pot, then add rice. Stir, cover the pot with a lid, and lower the heat to a simmer. Cook the rice for 22 minutes, then turn off the burner, and cook covered and untouched for another 7 minutes. After those 7 minutes, remove the lid and fluff with a fork.

  3. Drizzle avocado oil over baking sheet

  4. Cut the ends off the asparagus spears, and place on the oiled baking sheet with the green beans

  5. Season the veggies with 1/2 tbsp salt, and 1 tbsp of each: garlic powder, onion powder, chili powder, and turmeric. Place the baking sheet in the oven, and cook for 20 minutes, flipping veggies halfway.

  6. Season tilapia filets with lemon juice (1/2 of the lemon), 1/2 tbsp salt, and 1 tbsp of each: garlic powder, onion powder, chili powder.

  7. Spray the air fryer with avocado oil, and place the tilapia filets inside. Air fry at 375 for 15-18 minutes or until the fish flakes easily with a fork.

  8. To serve, add rice, tilapia, and veggies to a plate with a lemon wedge. Add hot sauce (Tapatio/Valentina) to the fish if desired.
